Joel Goldstein’s old family southern rib recipe. This recipe (circa 1800). has been passed down to me from “Bubba” Goldstein, Johnson City Tenn.
Put the south in your mouth!
Put rub on ribs about 4 hours before:
Rub: 1 cup sugar
1/4 cup brown sugar
1/4 cup paprika
1tbl garlic powder
1tbl onion powder
3 tbl chili powder
2 tbl Cyanne pepper
Temp on BBQ 350 degrees•
Put water pan on one side of BBQ
Cut ribs in equal parts to stand on rib stand
After one hour, more charcoal and wet hickory chips, cook about another 2 hours or until the bones show above the meat.
Now the ribs are ready to plate.
Cut and mop with sauce.
IMMEDIATELY DISROBE AND JUMP IN THE SHOWER.
